The knives of the EXKLUSIV C90 series are the entry into the Nesmuk EXKLUSIV world of hand-forged Damascus steel. The blade of the chef's knife consists of 230 layers and has a hardness of 62 HRC. Like all Nesmuk Damascus knives, they are also manufactured in the company's own forge. Best tool steels with high carbon content and rare metals such as tungsten, create blades with the finest sharpness and a longer service life.

Forged
by master hand

Unlike the EXKLUSIV C100 and C150 series, the blades are machine ground.
The handmade Damascus steel is superior in punko cutting ability and sharpness to the knives of the SOUL and JANUS series made of patented niobium steel. Here carbon steels still have an advantage over stainless steels. The 180 mm long blade makes the knife an all-rounder in any kitchen. Carbon content: 0.9%.

Exceptional hardness and sharpness

From fire welding and forging, hardening, tempering and grinding the hollow grind to assembling the handle. The production of a Nesmuk EXKLUSIV knife takes almost four dozen steps. The result is exceptional sharpness.

Corrosion resistant thanks to
Nesmuk Protective Coating

Thanks to the glass-like NPC coating (Nesmuk Protective Coating) developed together with the Fraunhofer Institute for Chemical Technology, the Nesmuk EXKLUSIV blades are protected against corrosion.

The cutting bevel of the blade is not coated. Therefore, you should always clean your Nesmuk EXKLUSIV knife after use. Clean the blade with detergent and under running water, dry well afterwards.

The little all-rounder

Genuine, hand-forged Damascus - and yet unusually light: The hollow grind applied to 210 layers of Damascus on one side creates the unique look and outstanding cutting properties of the hand-forged blade. Weighing only about 130 g, depending on the handle material, the EXKLUSIV C90 chef's knife is the lightest knife in the collection. The 140 mm long blade makes the knife an all-rounder in every kitchen. Carbon content: 0.9%.

Care instructions

 
Hand-forged damask knives usually require extensive care to prevent them from rusting. All Nesmuk EXCLUSIVE knives are finished with the exclusive NPC coating (Nesmuk Protective Coating). NPC is a silicon coating only a few micrometers thick, which is applied using microwave-generated plasmas and permanently preserves the blade. The seeming end of the knife is not coated and can therefore tarnish and, if not cared for, rust. Therefore, do not leave your Nesmuk EXKLUSIV in liquids for too long. Rinse and dry your knife after use.
We recommend regularly sharpening the edge with a suitable, fine sharpener such as the Nesmuk strop. This maintains the sharpness and protects against tarnishing or rusting of the edge. We recommend maintaining the blade from time to time with an acid-free oil, such as our camellia oil.
