Kai Weigand

Kai Weigand has already worked his way up mightily with his young years. After his apprenticeship at the Landhaus Tanner, he spent several years in the restaurants of the two-star and TV chef Tim Raue, where he honed his skills in the two-star restaurant, but also in the Brasserie Colette and Sra Bua. As head chef at Gutshaus Stolpe, he cooked up a Michelin star before moving to Hamburg in April 2022, where he is now putting his own spin on the Peruvian-Japanese menu at the NIKKEI NINE restaurant on the Binnenalster.

NIKKEI NINE in Hamburg artfully combines the delicate flavors of Japan with savory nuances from Peru. Discover unexpected fusions, such as the tartar of Wagyu beef from the south of Japan or the scallop reinterpreted by Peruvian accents. Experience the skills of our chefs right before your eyes as spectacular food is prepared over an open fire on the Robata grill in our show kitchen.

Immerse yourself in the cosmopolitan atmosphere of our Japanese restaurant on the banks of the Binnenalster. At NIKKEI NINE, a real hot spot on the scene, your senses will be pampered. Thursdays to Saturdays, a DJ rounds off the experience with atmospheric music.
